    Marinated whole chicken wings in a Indian style yogurt with freshly ground spices. Served with sliced sweet Walla Walla onions and fresh myer lemons.

    Fried Dahl
    Mildly spiced yellow lentils boiled with ghee until tender. Fried onions, garlic and curry leafs are combined with the dahl and are slowly simmered together. Garnished with chopped coriander and fresh lime.

    Pork shoulder marinated in fresh pounded garlic, ginger and chili. Cooked to perfection and served with jasmine rice.
  • Buttered Chicken Curry

    Fresh cream with tomatoes cashews, onions, garlic and ginger. Cooked down together with Chef Riks' Indian buttered seasoning blend. Consisting of cinnamon, cloves, star anise, cardamon and cumin seed. Served with homemade Indian Roti bread.

    Fijian style of Ceviche. Sushi grade aahi tuna marinated in lemon and lime for up to two hours. Combined with coconut milk, finely diced tomato, chili and salt. Served chilled in a coconut shell.

    Fijian local favorite. Pan fried rock fish topped with fresh coconut milk, coriander, mint, red onion and fresh squeezed lime. Served with boiled cassava.

    Succulent grass fed New Zealand lamb shanks cooked with onions, tomatoes, garlic, ginger freshly blended spices and topped with atomic fresh coriander. Served with basmati rice.

Chef Riks has the natural ability to create healthy, unique dishes influenced by Indian tradition and the fresh island flavors of his homeland, Fiji. Experience a taste of Fijian-Indo heritage; colorful curries, fragrant spices, fresh fish and creamy coconut.

Growing up on a large third-generation tropical fruit and vegetable farm in the isles of Fiji, Riks was surrounded by amazing and inspiring ingredients that fueled his culinary passion. Planning meals for family and friends meant daily gathering from the island’s abundance, creating some of Riks’ most cherished memories, like setting fishnets with his father for the catch of the day. Valuable family recipes were passed down to a young Riks by his mother, his biggest fan and avid cooking queen. Her wisdom guided Riks to success in cuisine and hospitality.

Ambition, hard work, and strong determination lead Riks through his life and has always kept his passion for cooking despite the hardships he faced as a young man. Through the years he found success in himself, happiness sharing cuisine with others, and love with his wife and fellow social butterfly Sarah. Together they hosted travelers from all over the world in their tropical vacation rental. Good times and great food were always close as Riks would provide mouthwatering meals to guests from all walks of life. Between meals, the couple would give travelers the local island experience and tour the magnificent beaches and landscape of the area. Food, fun and the sun - Fiji style!

After years of experience catering beautiful meals to tourists and special guests, Riks and Sarah made the move to the vast mountains of her home in Washington, where the plan for Fiji Fusion was created. His entrepreneurial spirit and strong support system contributed to the idea of a private chef service that offers a delicious Fijian-Indo menu to people from the comfort of their own homes.

I have had the opportunity to do a little bit of travelling and one of the most fundamental joys of getting to know another culture is having exposure to an entirely new culinary tradition. On rare occasions one also has the opportunity to meet the families that make that tradition a living, breathing human experience. Most of us have sampled something that resembles Asian, Italian, Mexican, or maybe even Middle Eastern cuisine but not many of us even knows what authentic Fijian cuisine looks like. I am grateful that I had the opportunity to dine with the Fiji Fusion Cuisine family. Even for the seasoned traveler I would offer this is an opportunity that should not be missed. If you are lucky you might even get to meet Riks and Sarah, two genuinely wonderful people who make this world a better and more interesting place for sharing their love and knowledge of Fiji and its food with the rest of us.

I was one of those lucky people to have personally met with Riks when I visited Fiji. Upon our arrival Riks came to get us at the airport and our first night stay was at his Airbnb. Riks offered to make us diner. This man is a gem not only were we going to be staying in his house but he made us a feast to remember. His food represented all that Fiji culinary experience had to offer. A home made cooked meal that was beyond anything we could imagine. We were treated like queens and kings. Riks is not only the best chef but also became a friend, because once you enter this guys life that's what happens he treats you like family. I hope you all get a chance to experience Riks cooking because it is out of this world.

Awesomely great, spending 10 days at Fiji with Riks Rai, Rosie Ray and Anaya Ray.

It was fantastic experience when Riks prepared this scrumptious Fijian fish dinner for us. From marketing to cooking follow with dining , the whole immense experience was remarkable and it was one of my favorite participation.

Making my reservation with Sarah was prompt and seamless too.

Thanks so much for everything! Heartfelt appreciation that I can be inclusive among the Fijian family in my solo traveling journey, it’s home away from home!

Sarah and Riks catered my sons party back in January and we were absolutely pleased with the delicious food they made! We had a large party of about 25 people we wanted to feed but we were not entirely familiar with Indian Fijian cuisine, so they graciously offered to mock up a menu for us for the party. I swear they couldn’t have picked a more tasty or diverse menu! Every dish was savory, well presented, and complimentary to each other. The guests loved the food and raved about it afterwards. Sarah and Riks were professional and kind and definitely knew what they were doing. We will for sure use them again in the future!
